it's a very rich stew with an intense and often somewhat spicy flavor profile. usual staples for the recipe i use are chicken thigh and andouille, the latter being a really good kind of smoked sausage. it's usually served with rice. hard to explain the flavor profile is pretty unique in my opinion. :)
