I have many anime I would recommend to people. I also have many I absolutely would not but I enjoy regardless. This is simply how it is sometimes. #lockanime

I see. Hmm... There is a certain bar for entry that many can come across if they attempt to leap into the deep end with anime. It relies on different tropes and cultural context than the movies and shows you're likely more used to. This means that I will probably withhold a few recommendations until you have determined whether or not you enjoy anime in general, if that's alright. However... I can recommend Cowboy Bebop, Paprika (Which is an anime movie, so a nice short watch), Lord of Mysteries (Which is not always considered an anime by everyone, but is very good. You will be confused, this is part of the point of it. It's fun, though, promise) and, though this may be hit or miss, Un-Go. With Un-Go, you will learn within the first two or three episodes whether it is for you or not, and if it is not, you can simply not watch any more.
Those were my recommendations based on the genres you mentioned, but in general I would also recommend for new audiences; Princess Mononoke (movie), and Delicious in Dungeon (it is a fantasy, one of my personal favourites and a show that I truly believe can be enjoyed with absolutely no knowledge of anime as a whole).
