HERBIVORES ARE GENERALLY CONSIDERED MORE DESIRABLE. THE MUSCULATURE IS THE MAIN POINT OF APPEAL IN MOST CASES. SO LOOK FOR BEASTS THAT HAVE THICK AND EASILY-SEPARABLE MUSCULATURE. WHEN PREPARING BEASTS WITH A FAST-TWITCH/SLOW-TWITCH DICHOTOMY. THE SLOW-TWITCH MUSCLES ARE PREFERRED.
